Autumn Fruit Relish

1tbsp oil
1 red onion, peeled and finely sliced
1 clove garlic, finely chopped
1 large red chilli, deseeded and finely sliced
100g (4oz) soft brown sugar
5tbsp red wine vinegar
2 apples peeled, cored and chopped
100g (4oz) blackberries
1 tsp ground allspice

Heat oil in a pan, add onion and cook slowly until softened and browned approx 8-10 mins

Add garlic, chilli, brown sugar and the red wine vinegar cook another 5 mins stirring until sugar dissolves

Add apples, blackberries and allspice and stir well

Cover pan and cook over a medium heat until the apples are fluffy, for about 10 mins

Remove from heat, pour into a jar and seal
