Chili Lime Sauce or Marinade

Ingredients

  • Makes about 1 cup
  • 2 small green chiles finely chopped
  • 1/2 cup fresh lime juice
  • Zest of 2 limes
  • 1/3 cup chicken stock
  • 1/4 cup cilantro (coriander) leaves
  • 2-3 cloves garlic, peeled and quartered
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • a pinch of black pepper

Instructions

Place all ingredients into a food processor and blend

Bring sauce to a simmer over medium heat

Reduce heat to low and let simmer for 5 minutes stirring occasionally

Remove from heat and let cool before serving

Store in an air tight container in the refrigerator for up to one week

    Then whisk in your oil

    Marinate your meat for at least 4-5 hours or overnight
