Ingredients

  • This Caribbean Dip Sauce is a delicious variant on the classic peanut satay sauce Caribbean Dip the traditional taste of Caribbean and Jerk flavors
  • Great for grilled shrimp, chicken and meat skewers
  • Makes approx 4 1/2 cups
  • 3/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup smooth peanut butter
  • Juice of 1 lime
  • 2 Tbsp dark rum
  • 2 Tbsp brown sugar
  • 2 Tbsp black pepper
  • 1 tsp crushed red pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp ground ginger

Instructions

Combine lime juice and soy sauce

Bring to a simmer then add sugar stir until dissolved

Add peanut butter, ketchup, rum, and stir it in

Add remaining ingredients mixing well

Let it cool Serve

Refrigerate in an airtight container good for two days

Ingredients

  • Makes about 1 cup
  • 2 small green chiles finely chopped
  • 1/2 cup fresh lime juice
  • Zest of 2 limes
  • 1/3 cup chicken stock
  • 1/4 cup cilantro (coriander) leaves
  • 2-3 cloves garlic, peeled and quartered
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • a pinch of black pepper

Instructions

Place all ingredients into a food processor and blend

Bring sauce to a simmer over medium heat

Reduce heat to low and let simmer for 5 minutes stirring occasionally

Remove from heat and let cool before serving

Store in an air tight container in the refrigerator for up to one week

    Ingredients

    • Makes about 1 1/2 cups
    • 1 cup meat drippings (or beef broth)
    • 1 cup ketchup
    • 1/2 cup water
    • 2 Tbsp rendered bacon fat (or melted lard)
    • 1 to 2 Tbsp Tabasco
    • 1 tsp Worcestershire sauce
    • salt and pepper to taste

    Instructions

    Combine all ingredients in a saucepan

    Bring to a boil stirring until blended

    Reduce heat to a low simmer for about 30 minutes until reduce by half

    Serve warm on the side

  • 2 cups ketchup
  • 1/3 cup brown sugar
  • 1/4 cup minced onion
  • 2 Tblsp olive oil
  • 2 Tblsp water
  • 3 cloves garlic crushed
  • 1 Tblsp apple cider vinegar
  • 1 Tblsp tomato paste
  • 1 Tblsp Worcestershire sauce
  • 1 tspn liquid smoke
  • 1 tspn dry mustard
  • 1/2 tspn cayenne (optional)
  • fresh ground pepper to taste

Instructions

Blend the onion and water into a puree

Add olive oil to a saucepan over a medium heat

Pour in onion puree when oil has heated

Simmer for 3 minutes

Add remaining ingredients and mix

Simmer on low for approx 15 minutes

Allow the sauce to cool to room temperature

Place in an airtight container and store in the refrigerator

Keeps for up to one week
